Emulsion droplets of Le Pastis: Investigating the micrometer range
Abstract: Ouzo-effect emulsion droplets have been studied by conventional SANS in the past, but their ability to accurately determine the size of the droplets was limited by the overall size of the droplets being greater than the resolvable maximum size of the instruments. In this proposal, spin-echo SANS (SESANS) will be used to size droplets in a model ouzo-effect emulsion (Le Pastis), which should enable the determination of the entire size distribution because of the ability of SESANS to measure correlations up to ~20 µm. Preliminary SESANS measurements on another emulsion (limoncello) show that this should be possible. The emulsions will be studied as a function of composition, temperature, and time. Altogether, the results will provide illuminating information about the process of ouzo-effect emulsification and will provide valuable experience to support my research into emulsions using neutron scattering.
