Comparative Neutron Vibrational Study of Antioxidants from Different Types of Mango Cultivars
Abstract: Antioxidants are vital molecules that protect biological systems from damage caused by reactive oxygen species and free radicals. Insufficient antioxidant defense can lead to oxidative stress, resulting in cell damage, aging, and chronic diseases such as cancer, diabetes, and cardiovascular disorders. Antioxidants are natural molecules that help protect the body from damage caused by reactive oxygen species unstable by-products of normal biological and environmental processes. Mango is one of Malaysia's most important tropical fruits and is exceptionally rich in antioxidants, including polyphenols, flavonoids, and carotenoids. However, not all mango species offer the same antioxidant strength. The proposed study will use neutron vibrational spectroscopy on TOSCA to characterise the vibrational and hydrogen-bonding features of antioxidant molecules extracted from natural sources. The expected outcome is a set of high-resolution spectra that reveal how hydrogen bonding and molecular structure differ among antioxidants. Neutrons are unaffected by sample colour or fluorescence, making them ideal for studying complex plant-derived materials.
