Nano-ordering in alcohol-oil mixtures
Abstract: We request 4 days on SANDALS to determine the structure of non-random ethanol-anethole binary mixtures across their composition range. Such mixtures, comprising an alcohol and a water-insoluble oil component, are encountered in a wide range of currently available beverages and chemical sanitisers, and are responsible for not fully understood phenomena such as the Ouzo effect (clouding of a ternary mixture on addition of surplus water to the binary alcohol-oil).
