SANS contrast variation investigations of the supramolecular structures present in rapeseed aqueous extracts
Abstract: Aqueous extractions from seeds (legumes, oilseeds) are the first step to the creation of novel, more sustainable food ingredients. These extractions, often made using colloidal mills, are a complex mixture of colloidal structures, spanning a wide range of length scales. Such colloidal raw extracts are then usually processed to obtain various ingredients for food and consumer products. Using H2O/D2O contrast in SANS measurements offers the unique ability to characterize the complex native structures present in these extracts, by isolating the scattering from different components in the mixture. This will improve our understanding of how to process plant extracts more sustainably in the future. Using multiple solvent contrasts, we will study various colloidal extracts from rapeseed and their fractions. The results, supported by an in-depth physico-chemical characterization (Aarhus University), will provide key new knowledge to understand how to better utilize these components as building blocks for new, innovative and sustainable products from plant extracts from legumes and oilseeds.
