Neutron diffraction characterization of a tyrosine-containing multi-phase self-assembled complex
Abstract: Water molecules are vital in the developments of hierarchical, dynamic and orderly assembled structures from simple amino-acid molecular aggregates, to biomolecules like proteins and peptides. Although the exploration and understanding of the role of water in these condensates is constantly being investigated, the process of water regulation and the possible multi-phase structures due to the presence of water have not been fully understood. This work has the aim of characterising the structural and compositional changes in the N-Carbobenzyloxy-L-tyrosine/water complex as a function of temperature, which is critical to understand the molecular mechanisms behind such self-assembly phenomena involving amino-acids and the extent of the interactions with water molecules.
