Ordering of water molecules in water/amino acid mixtures

Abstract: The obvious role played by water dynamics in the biological movements and reactions has stimulated huge experimental efforts during last years. However, biological materials are in general very complex systems, showing many degrees of freedom. Therefore, investigations on water dynamics in more simple systems - but showing similarities with biological materials - can illuminate the way to unravel these questions. In a recent experiment we have investigated the dynamics of water in amino acid solutions (lysine/water). The results are very promising but we need to analyze the structure of water molecules in the first hydration shell and also in those loosely bounded in the lysine solution. We propose to perform sandals experiments in order to learn about the ordering of water molecules about lysine.
